Poached Eggs, Bulgarian style is a recipe that’s simple and delicious. It makes for a good breakfast, lunch, dinner and any snack in between. It’s endlessly customizable and the perfect pick me up after school or before an event. Taking only 20 minutes to make, this twist on poached eggs makes my day every time I eat it.
Ingredients:
Water
Vinegar
Salt
2 Eggs
Greek yogurt
Feta cheese or some other types of cows cheese
Red pepper
2 tablespoons butter
While this recipe has generally agreed upon ingredients, this is where the endlessly customizable part kicks in. You like eggs? Use three or even four. Do you prefer more cheese than yogurt? Have at it! The only things constraining you are time and the size of the bowl. For example, traditionally this egg recipe has plenty of garlic, but it is by no means mandatory.
The first step is to pour water into a medium sized pot, put it on the stove, add the salt and vinegar and wait for it to boil. While it depends on the amount of water you put in, two-three tablespoons of vinegar is usually good.
Break the eggs from low, one at a time, carefully into a ladle and then gradually drop them into the boiling water.
If it is easier, you can crack the eggs into individual cups, and then drop them into the pot from low. Cook on medium heat. If you like softer eggs, boil them for about two minutes, but if you prefer them harder, boil them for about four minutes.
While they are cooking, take a bowl, or more if you need (expect to put two eggs per bowl) and put yogurt, around three or four tablespoons, but you can put more or less to taste. Sprinkle Feta Cheese on top of the yogurt, again to taste. If you want, you can mix in some mashed garlic.
When the eggs are nicely cooked, using a slotted spoon, take them out carefully and drain them slightly before placing them on top of the cheese.
Next, take your butter and heat it in a pan until it is totally melted and slightly browned. Sprinkle red pepper, either spicy or paprika, whichever you prefer, and then pour the butter over the bowl.
